The results of the study obtained using the dilatometry method show that the liming process occurs in two stages. At the first stage, for 2\u20134 hours, significant collagen breakdown is observed, accompanied by maxima: collagen swelling \u2014 43\u201367 %, contraction \u2014 3,2\u20133,9 %, release of tightly bound water \u2014 6,5\u20137,7 %. At the second stage of the liming process, due to conformational transformations of the collagen structure and the blocking effect of the processing reagents of the ash solution, a kind of stabilization of the collagen structure occurs, as a result of which the contraction and swelling values decrease. At the same time, at the second stage, the amount of tightly bound water released during splitting, after some decline, increases again and reaches a value of 8,7 %, which, apparently, can be explained by the influence of the process of washing out substances accompanying collagen. Analysis of thermogravimetric characteristics of collagen samples shows that the characteristics of the skin and bovine Achilles tendon samples differ insignificantly. The conducted thermogravimetric study confirms the results of the study by the dilatometry method and shows the proximity of the structural characteristics of the skin dermis and collagen samples of cattle tendon.
