Abstract. In connection with the current trend of increasing production and expanding the volume of use of animal proteins, the development of technologies that make it possible to convert insoluble structured protein into more popular forms (powders, emulsion gels) is of particular importance. Collagen is a protein of 18 amino acids from which collagen fibers are formed, which are the main component of animal connective tissue found in the intestines, stomach, skin, lungs, udder and other organs of animals. Collagen dissolution products find their application in various fields of human activity and are a sought-after product. A promising area for the use of collagen dissolution products are technological processes for finishing leather and fur, since today there are not many domestic materials for these purposes.
The article provides an overview of existing methods for obtaining collagen dissolution products. The following methods are currently used: collagen hydrolysis in the presence of acid or alkali, enzymatic treatment, if we consider them from the point of view of the main agent of molecular destruction.
These methods, despite their effectiveness and widespread use, are quite expensive in terms of the materials used, which, in addition, can create a certain environmental burden on the environment. A method for obtaining collagen dissolution products using an electrochemically activated solution (catholyte) is shown. The purpose of this study is to determine the effectiveness of catholyte as a solvent for collagen and what characteristics the collagen dissolution products will have during such treatment.
The work characterizes a number of indicators of the obtained collagen dissolution products and compares them with the standard method. The feasibility of using catholyte to obtain collagen dissolution products has been demonstrated.
