Abstract. The influence of the method of destruction of acid-labile bonds of a collagen macromolecule on the value of the dynamic viscosity of a biopolymer obtained from substandard leather raw materials has been studied. It has been shown that the use of a fermented milk composition as an acidic agent makes it possible to obtain a biopolymer with the maximum preservation of peptide bonds, which is confirmed by a higher dynamic viscosity compared to biopolymer 2, for which lactic acid was used. Based on the results of the studies, it was found that biopolymers 1 and 2 belong to non-Newtonian fluids and exhibit thixotropic properties, which are characterized by a decrease in dynamic viscosity depending on the duration of the spindle rotation. The dynamic viscosity of biopolymer 1 was 14133.3 cPs, and that of biopolymer 2 — 2500 cPs.
